Whole Wheat Banana Chocolate Chip Waffles-
-1 cup old fashioned oatmeal
-1 cup whole wheat flour
-1 tablespoon Baking Powder
-1/2 teaspoon baking soda
-1/2 teaspoon cinnamon
-1/8 teaspoon nutmeg
-3 tablespoons brown sugar
-1 1/2 cup milk
-2 eggs
-4 ripe bananas
-4 tablespoons of melted butter
-1 tablespoon of vanilla
-1/4 cup of chocolate chips
1. Place 1/2 cup of oats in a bowl and the remaining 1/2 cup of oats in a blender and chop for 15-30 seconds.
2. Pour chopped oats into the bowl with the oats and stir to combine.
3. Mix the dry ingredients (flour, baking powder, baking soda, cinnamon, nutmeg & brown sugar) together on low in the blender for 15 seconds. Remove and add to oats and stir.
4. Mix the milk, eggs, bananas, butter & vanilla on medium in the blender for 30 seconds. Pour into oat mixture and stir until combined.
5. Sprinkle the chocolate chips into the batter and stir.
6. Pour 1/2 cup of batter into hot waffle iron and cook for 4 minutes.
7. Enjoy!
- Steak- Cut into strips and saute in oil for approximately 5-10 minutes over medium heat.
- Chicken- Cut into bite-size pieces and saute in oil approximately 15 minutes over medium heat.
- Shrimp- Clean and saute in butter, until pink over medium heat.
This is a recipe my sister gave to me a few years ago. I’m unsure where or who she got it from, however I find it to be very easy and delicious!
Ingredients:
– (1 package) Oriental Ramen Noodles
– (1/4 cup) Soy Sauce
-(1 lb) Vegetables (Leasa or your favorite stir fry vegetables)
– (1 lb) Beef Strips
-Meat Tenderizer
Directions:
1. Sprinkle beef strips with meat tenderizer. Add oil to large skillet and cook beef over medium-high heat (approximately 5 minutes, depending on the thickness of the meat).
2. Remove beef strips from pan and drain the grease.
3. Pour 2 cups of water & Ramen noodles into skillet and cook for 3 minutes.
4. Add vegetables to noodles, cover and cook for 5-7 minutes, over medium heat.
5. Combine soy sauce and powder from the Ramen noodles package.
6. Add beef strips to skillet, along with soy sauce mixture. Cover and cook an additional 5-7 minutes, over medium heat.
7. Serve over white or brown rice.
8. Enjoy!
This is one of the three pies I made for Thanksgiving.
It was the first pie to disappear and also became a request for Christmas! I’ve made other pecan pies in the past, but I believe this to be the best and the easiest!

Ingredients:
-Basic Pie Crust
-4 Large Eggs
-1 Cup Light Corn Syrup
-1/3 Cup packed light-brown sugar
-1/4 Cup granulated Sugar
-4 Tablespoons unsalted butter, melted
-1 teaspoon vanilla extract
-1/2 teaspoon salt
-3 Cups Pecan Halves
Directions:
1. Lower the oven rack to the lowest possible position. Preheat oven to 375 Degrees.
2. Roll out dough and fit to a 9 inch pie plate. Leave a 1 inch overhang and fold. Use your thumb and forefinger to crimp the crust (I like to create a “V” with my thumb and pointer finger-left hand, and press into it with my other pointer finger- right hand. I continue this around the pie crust. Place prepared pie plate in the fridge.
3. Filling- Whisk: eggs, corn syrup, brown sugar, granulated sugar, butter, vanilla, and salt until it appears smooth. Add pecans and lightly mix.
4. Remove prepared pie plate from the fridge and pour filling inside.
5.Place on baking sheet and bake 50-60 minutes (During the last part of baking, cover crust with aluminum foil or pie crust shield for about 30 minutes. This will prevent the crust from overcooking). Pie should slightly jiggle when ready!
6. Cool pie completely for 5-6 hours.
7. Enjoy!
